Egg Kheema with Drumstick Leaves

Drumstick leaves are very healthy and must be eaten quite often. Here is a quick n easy recipe which even kids will love too. Taste bhi aur health bhi :-) Vegetarians can use grated paneer/potato instead of egg.

Ingredients :

Drumstick leaves 1.5 cup packed
Garlic cloves 4
Cumin seeds 1/2 tsp
Green chillies 2
Boiled and grated eggs 4
1 medium onion finely chopped
1 medium tomato finely chopped
Red chilli powder 1/2 tsp
Coriander powder 1/2 tsp
Cumin powder 1/2 tsp
Mustard seeds 1/2 tsp
Ginger garlic paste 1 tsp
Garam masala powder 1/2 tsp
Turmeric 1/2 tsp
Salt
Oil 3 tsp

Method:

1. Heat 1 tsp oil in a pan, add cumin seeds, garlic cloves, green chillies and then add the washed drumstick leaves and cook till the leaves are fully cooked by adding little salt.
2. Cool and grind the leaves  to coarse paste. Don't make it smooth, you should be able to the leaves still.
3. Now heat 2 more tsp oil in the pan, add mustard seeds, onions, ginger garlic paste in the order and cook till onion turn slightly brown.
4. Now add turmeric powder and the chopped tomatoes and cook till they turn mushy.
5. Now add coriander powder, cumin powder, red chilli powder and salt. Check the taste and adjust salt and chilli powder now itself as we should not mix too much after adding grated boiled eggs.
6. Now add the grated eggs, garam masala powder, mix once and cook for 2 more mins.
7. Serve hot with roti.

Egg Keema Mutter

Ingredients:

Eggs 6 hard boiled
1 medium onion very finely chopped
Tomato 2 medium pureed
Oil 1.5 tsp
Fennel seeds 1/2 tsp
Whole spices (1 Bay leaf, 1/2 inch cinnamon stick, 2 cloves, 1 black cardamom, 3 green cardamom)
Ginger garlic paste 1 tsp
Green chillies finely chopped 2
Red chilli powder 1 tsp
Turmeric powder 1/2 tsp
Garam masala powder 1/2 tsp
Coriander powder 1 tsp
Cumin powder 1/2 tsp
Coriander leaves finely chopped 3 tsp
Frozen green peas 1/4th cup (optional)
Salt































Method:

1. Grate the egg with a grates with wide holes so that they wont be mushy.
2. Heat oil in a pan, add fennel seeds, whole spices, then add onions and fry till they get brown, add salt.
3. Add ginger garlic paste and cook for  a minute and then add turmeric and then add the tomato puree.
4. Cook till the oil oozes out from sides and then add coriander powder, cumin powder, red chilli powder mix well and then add the green peas and cook for 2-3 mins.
5. Now add 1/2 cup water, mix well and check salt and red chilli powder and add more if required at this point as adding them at the end will make the egg to become mushy.
6. Now add the grated egg, mix well and cook for 3-4 mins, garnish with coriander leaves and serve hot with any roti.

Garlicky Egg Roast

Ingredients:

Eggs 4
Garlic cloves 8
Black pepper powder 1/2 sp
Onion 1 small finely chopped
Salt
Oil 1 sp



Method:

1. Boil and peel the eggs and cut them into small pieces.
2. Heat oil in a pan, add crushed garlic, onions and saute till onions get slightly brown.
3. Add the egg, black pepper powder, salt and toss well and cook for 5 mins till the edges of egg pieces start to get slightly brown.
4. Serve with rice as side dish or with roti.

Spinach Egg Sandwich (Palak Egg Sandwich)

Ingredients:

Brown bread slices 4
Spinach 2 cups packed
Eggs 2
Oil 1 sp
Cumin seeds 1/2 sp
Garlic cloves 3 crushed
Black pepper powder 1/2 sp
Butter 1.5 sp
Salt to taste




Method:

1. Heat oil in a pan, add cumin seeds and let them crackle, then add crushed garlic and cook for a min.
2. Then add washed and chopped spinach and cook till all the water evaporates and looks dry.
3. Now move the spinach aside in the same pan and add the eggs on the other side and scramble it and cook for 2 mins.
4. Then mix the egg with spinach and add salt, pepper powder and mix well.
5. Now the filling is ready.
6. Spread some butter on one side of each slice and put the filling between 2 slices and toast them on tawa on both sides carefully making sure that the filling wont fall out and the toast becomes nice brown colour and crispy.
7. Cut into triangle shapes and serve as breakfast or as a snack. This is a very healthy and filling breakfast.

Egg Bonda (Egg Bajji)

Ingredients:

Eggs boiled and peeled 4
Besan flour 1 cup
Baking soda small pinch
Red chilli powder 1 sp
Ajwain seeds 1 sp
Cumin seeds 1/2 sp
Salt to taste
Oil for deep frying


Method:

1. Cut boiled and peeled eggs into halves.
2. Mix all the ingredients except eggs and oil by adding sufficient water to prepare the batter. The consistency should be like that of idli batter.
3. Heat the oil in a pan for deep frying.
4. Dip eggs in the batter and make sue the egg is nicely coated with the batter and fry in the oil on medium flame.
5. Serve hot with any sauce or green chutney.
